In preparation for Easter, Mi Ciudad will have Fanesca in its menu this Thursday and Friday only (April 9 and 10, 2009). Fanesca is a very traditional soup from Ecuador and is a very special soup because it is only prepared once a year during Easter. Fanesca is made of grains, legumes, cereals, and fish.
There are 36 main grains like beans, lima beans, peas, and cereals like corn, barley, and chocho. But the key ingredient to Fanesca is the bacalao seco or dried salt cod, it needs to be soaked for 24 hours. The cod is then cooked in milk and then “infused” with the soup to create this very rich Easter Dish.
